The method comprises the steps of obtaining bromhidrosis Chai Duotang through tartaric acid-assisted extraction and alcohol precipitation purification, preparing stock solutions with mass fractions of 2.0% -5.0% and 25% respectively with whey protein isolate, mixing according to a volume ratio of 1:1, adjusting pH to 7.0, heating in a 95 ℃ water bath for 30 minutes to induce gelation, and cooling to obtain the bromhidrosis extract. The water holding capacity of the obtained composite gel reaches 78.95-80.26%, the hardness is 16.67-21.07N, the elasticity is 0.59-0.81, the thermal decomposition temperature is stabilized above 198 ℃, and the rheological behavior shows typical shear thinning characteristic tan delta value of 0.3-0.9. The gel can reduce whey extraction rate by 68% when applied to yogurt, and can improve toughness by 45% when used in jelly, and has no obvious water separation or deformation when stored at 25deg.C for 1 month. The invention has natural raw materials, simple process and good reproducibility, and provides a new way for developing high-performance and clean-label food colloid materials.
