Description
Polysaccharide substance encapsulated resveratrol compound and preparation method and application thereof Technical Field The invention relates to the technical field of encapsulation compounds, in particular to a resveratrol complex encapsulated by polysaccharide substances, a preparation method and application thereof. Background Hydrophobic bioactive substances (such as resveratrol) have poor water solubility and weak environmental stability (easy to be degraded by heat, light and ions), and limit the application of the hydrophobic bioactive substances in foods. In view of the above problems, the Chinese patent application No. CN201910556255.9 (publication No. CN 112120945A) discloses a water-in-water composition containing resveratrol in high content, which comprises an internal phase containing a polyol polymer with a molecular weight ranging from 200 to 600 g/mol and resveratrol, wherein the weight ratio of the polyol polymer to resveratrol is equal to or greater than 10:1, the content of the polyol polymer is less than 55% by weight and the content of resveratrol is up to 5% by weight based on the total weight of the composition, and an external phase containing a natural high molecular polysaccharide polymer with a molecular weight ranging from 2X 105 to 5X 105 g/mol, the content of the natural high molecular polysaccharide polymer being from 1% by weight to 10% by weight based on the total weight of the composition. The patent improves the stability and water solubility of resveratrol by means of a polyol polymer and a high molecular polysaccharide polymer. The external phase (natural high molecular polysaccharide polymer) of this patent is used only as a "protection/delivery tool" to improve the solubility, stability or bioavailability of resveratrol, while the function of the external phase itself is not enhanced. Disclosure of Invention The first technical problem to be solved by the invention is to provide a polysaccharide substance for encapsulating resveratrol compound, wherein the polysaccharide substance can improve the performance of resveratrol, and the polysaccharide substance can also improve the performance in the process. The second technical problem to be solved by the invention is to provide a preparation method of the resveratrol complex encapsulated by polysaccharide substances aiming at the current state of the art. Preferably, the linear polysaccharide is extracted from Dendrobium officinale. Dendrobium officinale is used as a medicine and food homologous raw material, and polysaccharide (DOP) of the dendrobium officinale has excellent biological activities such as antioxidation, immunoregulation and the like, and is strong in thermal stability and good in film forming property, and is a potential natural bioactive substance embedding carrier.
