Description

Modified naringin fiber gel with high naringin content and preparation method thereof Technical Field The invention belongs to the technical field of processing of agricultural product additives, and particularly relates to a modified naringin fiber gel with high naringin content and a preparation method thereof. Background The pomelo peel is a main byproduct generated in the citrus processing process, has huge yield and is rich in various functional components, and has extremely high development potential. The naringin is rich in dietary fiber and contains a large amount of naringenin, and the natural flavonoid compound widely exists in citrus peel such as naringin, has various effects of resisting bacteria, resisting inflammation, resisting oxidation, relieving cough, eliminating phlegm and the like, can regulate organism metabolism, strengthen immune function, and has important application value in the fields of pharmaceutical preparations, functional food additives and the like. However, naringenin has inherent defects of strong hydrophobicity and poor water solubility, which makes it difficult to disperse in an aqueous solution system and has low bioavailability, and meanwhile, naringenin is easy to degrade due to the influence of external environment and has poor stability, thus greatly limiting the practical application range and effect. The shaddock ped fiber is a main component of shaddock ped, belongs to natural dietary fiber, has the advantages of wide sources, reproducibility, no toxicity, no harm, good biocompatibility and the like, has certain water absorption, water retention and gelation potential, and can be used as a natural functional carrier material. However, natural naringin fiber has the problems of compact structure, low surface activity, insufficient functional characteristics and the like, has weak loading capacity on active ingredients such as naringenin and the like when directly applied, is difficult to form a gel system with stable performance, and cannot fully play the carrier role. At present, related researches on using modified naringin fibers for preparing gel or loading active ingredients exist in the prior art, and the modification methods mainly comprise chemical modification, physical modification and the like, so that the dense structure of the naringin fibers can be damaged, the specific surface area and the surface active site of the naringin fibers can be increased, the loading performance and the gel performance can be further improved, and meanwhile, the research on combining naringenin and the naringin fibers to prepare a composite functional material is also performed, so that the synergistic effect of naringenin and naringenin is realized, and the solubility and stability of naringenin are improved. However, the existing modified naringenin fiber has low loading rate on naringenin, high-content loading is difficult to realize, the activity of naringenin cannot be fully exerted, and the loaded naringenin Pi Suyi is desorbed and degraded, so that the stability is poor. In addition, the existing preparation process has the problems of complex flow, complicated operation, harsh conditions and the like, influences the safety and biocompatibility of the product, and meanwhile, the obtained gel system has the disadvantages of poor stability, poor mechanical property, easy aging and difficulty in meeting the actual application requirements. In addition, the comprehensive utilization degree of the naringenin is low in the prior art, and only naringenin is often extracted singly or naringenin fibers are utilized, so that functional components of the naringenin are not fully utilized, and resource waste is caused. The invention adopts electrochemical auxiliary gradient enzymolysis to destroy the dense network structure of the fiber so as to increase the active site, the immobilized naringinase can not only efficiently convert naringin and accurately enrich naringenin, but also effectively improve bitter taste, and the magnesium ion regulates and controls multiple crosslinking networks formed by each component so as to enable the gel structure to be more stable, and simultaneously stably loads naringenin so as to avoid migration and aggregation, thereby remarkably improving the bioavailability and active efficacy of naringen
