Abstract
A powdered, plain foamable clouding agent suitable for forming a foamed beverage is disclosed, the clouding agent comprising 20-45 wt% of a vegetable oil that is liquid at 20 ℃,45-70 wt% of a carbohydrate, 0.2-1.2 wt% of an ionic emulsifier selected from the group consisting of DATEM, SSL, CITREM and combinations thereof, 0.6-2.0 wt% of a sucrose ester, and 0.1-5.0 wt% of at least one component selected from the group consisting of buffers, free-flowing agents, antioxidants, moisture, and combinations thereof, wherein the clouding agent is a powder.

Claims (15)
- 1. A powdered, plain foamable clouding agent suitable for forming a foamed beverage, the clouding agent comprising, based on total weight: a) 20-45 wt% of one or a combination of vegetable oils that are liquid at 20 ℃, B) 45-70 wt% of a carbohydrate, C) 0.2-1.2 wt% of an ionic emulsifier selected from the group consisting of diacetyl tartaric acid esters of mono-and Diglycerides (DATEM), sodium Stearoyl Lactylate (SSL), citric acid esters of mono-and diglycerides (CITREM), and combinations thereof, D) 0.6 to 2.0 wt% sucrose ester, and E) 0.1-5.0 wt% of at least one component selected from the group consisting of buffers, free-flowing agents, antioxidants, moisture, and combinations thereof.
- 2. The powdered, plain foamable clouding agent according to claim 1, wherein the sucrose ester/ionic emulsifier weight/weight ratio is in the range of 1/1-9/1, preferably 1/1-7/1, more preferably 1.5/1-5/1, most preferably 2/1-4.5/1.
- 3. The powdered, pure, foamable clouding agent according to claim 1 or 2, wherein the ionic emulsifier is DATEM.
- 4. A powdered, plain foamable clouding agent according to any one of the preceding claims, wherein the vegetable oil comprises triglycerides of which more than 70% (wt./wt.) are monounsaturated fatty acid residues, preferably comprising c18:1 residues.
- 5. The powdered, pure, foamable clouding agent according to any one of the preceding claims, wherein the vegetable oil is selected from the group consisting of high oleic sunflower seed oil, ultrahigh oleic sunflower seed oil, high oleic rapeseed oil, ultrahigh oleic rapeseed oil, high oleic canola oil, ultrahigh oleic canola oil, high oleic soybean oil, ultrahigh oleic soybean oil, high oleic safflower oil, ultrahigh oleic safflower oil, coconut oil, virgin coconut oil, and combinations thereof.
- 6. A powdered pure plain foamable clouding agent according to any preceding claim, wherein the sucrose ester comprises sucrose stearate.
- 7. The powdered, plain foamable clouding agent according to any one of the preceding claims, wherein the sucrose ester has an HLB value below 20, preferably 10-20, more preferably 13-20, even more preferably 15-20, most preferably 15-16, said HLB value being defined as HLB = 20 M (h)/M, wherein M (h) is the molecular weight of the hydrophilic portion of the sucrose ester and M is the molecular weight of the entire sucrose ester molecule.

The powdered, pure, foamable clouding agent according to any one of the preceding claims, wherein the buffer is selected from the group consisting of tripotassium citrate, monopotassium phosphate (KH 2 PO 4 ), sodium dihydrogen phosphate (NaH 2 PO 4 ), dipotassium hydrogen phosphate (K 2 HPO 4 ), disodium hydrogen phosphate (Na 2 HPO 4 ), tripotassium phosphate (K 3 PO 4 ), trisodium phosphate (Na 3 PO 4 ) and combinations thereof, preferably the buffer comprises tripotassium citrate.
- 9. A powdered, plain foamable clouding agent according to any preceding claim, wherein the carbohydrates are selected from the group consisting of glucose syrup, maltodextrin and combinations thereof, and preferably are glucose syrups.
- 10. The powdered, pure, foamable clouding agent according to any one of the preceding claims, which is substantially free of titanium dioxide and/or substantially free of protein.
- 11. The powdered, pure, foamable clouding agent according to any one of the preceding claims, which is substantially free of components derived from palm oil.
- 12. A process for preparing a clouding agent according to any one of the preceding claims, the process comprising the steps of: i) Providing an aqueous mixture comprising a carbohydrate, an ionic emulsifier selected from the group consisting of DATEM, SSL, CITREM and combinations thereof, a sucrose ester, and at least one component selected from the group consisting of a buffer, an antioxidant, and combinations thereof, Ii) providing a vegetable oil phase which is liquid at 20 ℃, Iii) Mixing the aqueous mixture and the oil phase to obtain a pre-emulsion, Iv) homogenizing the pre-emulsion to obtain an emulsion, and V) spray drying the emulsion to obtain the clouding agent in powder form.
- 13. The method according to claim 12, wherein the homogenizing is performed as a two-step homogenizing, preferably wherein the first step is performed at a pressure in the range of 130-250 bar and the second step is performed at a pressure in the range of 15-50 bar.
- 14. An instant beverage mix, preferably a fruit flavored beverage mix, comprising the powdered plain foamable clouding agent according to any one of claims 1 to 11.
- 15. Instant beverage mixture according to claim 14, further comprising fruit extracts, fruit flavors, sugar, acidity regulators and/or thickeners.
Description
Clouding agent for forming foamed beverage The present invention relates to a particulate clouding agent suitable for forming a foamed beverage. The invention further relates to the preparation of such clouding agents and their use in instant beverage mixtures for forming cloudy, foamy beverages when mixed with water. It is well known to prepare beverages by mixing a dry ingredient mixture with water. In particular, beverages made from dry beverage mixes form an alternative to natural beverages (if juice beverages) and are popular due to their constant quality and convenience. Some fruit-based beverages made from such dry mixtures also have a foamy appearance after their preparation, such as Tang from Yizi Corp (Mondelez). Natural juices have a cloudy appearance because they are untreated to remove cellular residues (fibers, oil droplets) from the fruit source. This turbidity provides the beverage with a natural appearance. In order to obtain the same natural, cloudy appearance as natural juice, the dry mix used to prepare fruit-based beverages is typically supplemented with a so-called clouding agent. The conventional clouding agent is titanium dioxide (TiO 2), which has recently been banned from food in Europe. Other useful clouding agents include White Diamond TM from Dele corporation (Doehler) based on calcium sulfate, avalanche TM Ultra from Senxin corporation (Sensient) based on MCT oil and Nosa starch (i.e., modified starch, E1450), and PEARLEDGE TM from Aide corporation (ADM) which is 100% starch-based. A disadvantage of such clouding agents is that they tend to precipitate in the beverage. Further alternatives to TiO 2 are described in WO 2022/187422 (sweet corn flour comprising soluble starch) and WO 2016/106018 (retrograded maltodextrin). The object of the present invention is to provide a clouding agent which, in addition to its clouding properties, is capable of producing foam on a beverage. Preferably, the foam remains stable for a sufficient period of time after its preparation. In view of the current consumer demand, another object is to provide a pure plain clouding agent. It is another object to provide a clouding agent suitable for producing a cold drink, which means that the drink mix (including clouding agent) should be easily and quickly dissolved in cold water. In addition, it is desirable that the clouding agent be free of palm oil derived components (including palm oil and MCT oil) and/or be protein free. The present invention relates to a powdered, pure, foamable clouding agent suitable for forming a foamed beverage, said clouding agent comprising, based on total weight: a) 20-45 wt% of one or a combination of vegetable oils that are liquid at 20 ℃, B) 45-70 wt% of a carbohydrate, C) 0.2-1.2 wt% of an ionic emulsifier selected from the group consisting of diacetyltartaric acid esters of mono-and diglycerides (DATEM; E472E), sodium stearoyl lactylate (SSL; E481), citric acid esters of mono-and diglycerides (CITREM; E472) and combinations thereof, D) 0.6 to 2.0 wt% sucrose ester, and E) 0.1-5.0 wt% of at least one component selected from the group consisting of buffers, free-flowing agents, antioxidants, moisture, and combinations thereof. The clouding agent according to the present invention provides a satisfactory turbidity (haze) in fruit-based beverages prepared from instant powdered fruit mixtures. In addition, the clouding agent is foamable, which means that it enables the formation of foam when dispersed and mechanically treated (stirred, shaken) in a (aqueous) fluid, for example when preparing a fruit-based beverage from an instant powdered fruit mixture. In addition to being foamable, the clouding agent according to the invention is capable of stabilizing foam. Furthermore, the clouding agent is neat (i.e., free of animal derived ingredients) and may be prepared without the use of titanium dioxide and/or palm oil derived components. It further does not require the presence of proteins. The invention further relates to a process for the preparation of a powdered, pure, foamable clouding agent, comprising the steps of: i. providing an aqueous mixture comprising a carbohydrate, an ionic emulsifier selected from the group consisting of DATEM, SSL, CITREM and combinations thereof, a sucrose ester, and at least one component selected from the group consisting of a buffer, an antioxidant, and combinations thereof, Providing a vegetable oil phase which is liquid at 20 ℃, Mixing the aqueous mixture and the oil phase to obtain a pre-emulsion, Homogenizing the pre-emulsion to obtain an emulsion, and Spray drying the emulsion to obtain the powdery pure foamable clouding agent.
