CN-121986894-A - Aerated soda water and preparation method thereof
Abstract
The invention discloses a gas-containing soda water and a preparation method thereof, and relates to the technical field of food and beverage, wherein the gas-containing soda water comprises, by mass, 0.1% -1.5% of white birch juice, 0.01% -0.1% of baking soda, 0.00001% -0.0001% of licorice extract, 0.005% -0.1% of lemon extract and the balance of water, and the carbon dioxide gas capacity (20 ℃) of the gas-containing soda water is 3.0-4.2 times. The four components are combined and added into the carbonated soda water, so that the number of bubbles is larger, the size of the bubbles can be changed, the bubbles become more stable and firm, the residence time of the bubbles in an oral cavity is prolonged, the air loss rate is obviously reduced, and the carbonated soda water has stronger mouthfeel. In addition, the combination of the components can also obviously improve the overall taste and flavor of the carbonated water, so that the carbonated water is softer, richer and more durable.

Description
Aerated soda water and preparation method thereof Technical Field The invention relates to the technical field of food and beverage, in particular to carbonated water and a preparation method thereof. Background The bubble water is taken as a beverage, is popular with consumers due to the unique characteristics of relieving summer heat, quenching thirst, killing taste, reducing temperature and the like, and occupies a larger share in the market. Along with the improvement of the living standard of people and the popularization and enhancement of the health concept, consumers increasingly pay attention to health elements such as low sugar, green, natural and the like, which become important standards and trends of food and beverage consumption, and promote the rapid development of the bubble water market. At present, most of soda water products sold in the market use purified water and carbon dioxide as raw materials, and the air bubbles of partial brands are weak in strength and strong in taste killing at one entrance, but the air bubbles are fast to dissipate, and the entrance becomes soft and weak, so that the soda water products are not addicted enough. Meanwhile, carbon dioxide is dissolved in water to form carbonic acid (H 2CO3), so that the water is acidic and slightly sour and astringent, and the common bubble water has the problems of poor taste or single flavor. In view of this, the present invention has been made. Disclosure of Invention The invention aims to provide carbonated water and a preparation method thereof. The invention is realized in the following way: In a first aspect, the invention provides carbonated water, which comprises, by mass, 0.1% -1.5% of white birch juice, 0.01% -0.1% of baking soda, 0.00001% -0.0001% of licorice extract, 0.005% -0.1% of lemon extract and the balance of water, wherein the carbon dioxide gas capacity (20 ℃) multiple of the carbonated water is 3.0-4.2 times. In an alternative embodiment, the components comprise, in mass percent, 0.6% -0.9% of white birch juice, 0.03% -0.07% of baking soda, 0.00005% -0.00007% of licorice extract, 0.02% -0.07% of lemon extract and the balance of water, wherein the carbonated water has a carbon dioxide gas capacity (20 ℃) multiple of 3.2-4.2. In an alternative embodiment, 15mL of the carbonated water is poured into a culture dish within 5 seconds under the conditions of 20 ℃ and normal pressure, a picture of bubbles at the time of 5 seconds is taken, the number of bubbles with diameters of 0.1-2mm released in 15mL of the carbonated water is more than 300, and the bubble holding time of the bubbles is more than or equal to 60 seconds. In an alternative embodiment, the air loss rate of the carbonated water for 30min is less than or equal to 34%, wherein the calculation formula of the air loss rate is that the air loss rate is = [ (air content after bottle opening-air content after bottle opening for 30 min)/air content after bottle opening ] ×100%. In an alternative embodiment, the preparation method of the licorice extract comprises pulverizing licorice root, extracting with water, filtering, concentrating, drying, and sieving. In an alternative embodiment, the preparation method of the lemon extract comprises mixing lemon peel and green lemon peel, distilling, extracting, collecting condensate and separating to obtain lemon essential oil. In a second aspect, the present invention provides a process for the preparation of a carbonated water according to any one of the preceding embodiments, comprising mixing the components, metering and sterilizing, followed by aeration. The invention has the following beneficial effects: The air-containing soda water provided by the invention combines the four components of the white birch juice, the baking soda, the licorice extract and the lemon extract, and is added into the air-containing soda water, so that the number of bubbles is increased, the size of the bubbles can be changed, the bubbles become more stable and firm, the residence time of the bubbles in an oral cavity is prolonged, the air loss rate is obviously reduced, and the mouth-killing effect is stronger.
