A method for improving the yield and quality of ginger is characterized by comprising the following steps of spraying a choline chloride aqueous solution on leaf surfaces for the first time in a growth vigorous period of ginger seedlings, wherein the concentration of choline chloride in the choline chloride aqueous solution is 75-350 mg/L.
- 2. The method of claim 1, wherein the second foliar spray of aqueous choline chloride is performed at intervals of 13 days to 15 days after the first spray.
- 3. The method of claim 1, wherein the vigorous growth phase is a phase after 5 seedlings are established by issuing 4 branches on both sides of the main stem.
- 4. The method of claim 1, wherein the spraying is performed at 7:00-10:00 am or at 16:00-18:00 pm.
- 5. The method of claim 1, wherein the spray is applied to all of the front and back sides of the blade in a wet condition, but the droplets do not polymerize and fall to a degree.
- 6. The method of claim 1, wherein the ginger is white ginger.
- 7. The method according to claim 1, wherein the total number of spraying of the aqueous solution of chlorinated choline is 2.
- 8. The method of claim 1, wherein improving ginger quality comprises reducing lignin content, increasing vitamin C content, reducing gingerol content, and/or reducing crude fiber content.

In addition, the winter vegetables have higher prices, so that how to improve the yield and quality of the ginger, delay the maturation, prolong the harvesting period of the ginger, realize green, high-quality, high-efficiency and sustainable production of the ginger, and have important application value for improving quality and efficiency and developing high quality of the ginger industry.
