Abstract

The invention discloses an application of a Pediococcus acidilactici NR-combined complex enzyme preparation in preparing a wheat bran starter and a fermentation method thereof, belonging to the field of fermentation engineering and feed processing. The invention provides a method for improving the protein content and the protein digestibility of fermented wheat bran by synergistic fermentation of Pediococcus acidilactici and a compound enzyme preparation, which obviously improves the acid-soluble protein content and the in-vitro protein digestibility of wheat bran by fermentation technology. In the actual animal feeding test, the fermented wheat bran shows excellent feed substitution effect, can partially replace corn and soybean meal, remarkably improves the feed digestibility and reduces the feed cost. The invention provides a new way for the high-value utilization of wheat bran, and has wide application prospect and important economic significance.
