Abstract

The highland barley germinated rice is prepared by the controlled germination and light processing of the preferred highland barley variety. Highland barley varieties of sweet waxy No. 3 and sweet waxy No. 0917 with obvious arabinoxylan content increase after germination are optimized, and 20 ℃ is determined to be the optimal germination temperature. Under the condition of germination, the arabinoxylan content in the seeds can be increased by 47.9% -346.3%, and the highest arabinoxylan content is 8.78% (dry basis). The germinated kernels are subjected to light skin grinding treatment, so that the prepared germinated rice product not only maintains nutritional ingredients such as high arabinoxylan, polyphenol, flavone, gamma-aminobutyric acid and the like endowed by germination to the greatest extent, but also has good edible taste. The product utilizes the characteristics of degradation, no gas production and digestion delay of arabinoxylan at the rear end of intestinal tract, and can effectively stabilize postprandial blood sugar and improve gastrointestinal tract tolerance.
