The soybean isolated protein-based composite particle loaded with the bovine myocardial peptide and the preparation method thereof are characterized by comprising the following steps: Dissolving a certain amount of Soy Protein Isolate (SPI) and 0.4 g Niu Xinji peptide (BMP, self-made by laboratory) in 20 mL deionized water, continuously stirring for 3.0 and h, and adjusting the pH of the solution to a preset range for later use; Dissolving a certain amount of Sodium Alginate (SA) in 20 mL deionized water until the solution is completely transparent; Slowly adding the soybean protein isolate-bovine myocardial peptide mixed solution into sodium alginate solution, regulating the pH of the mixed solution to a proper range, continuously stirring for 1.0 h, centrifuging at 8000 g for 10min to obtain supernatant, standing the supernatant at 4 ℃ for 24: 24h, and freeze-drying to obtain the soybean protein isolate-Niu Xinji peptide-sodium alginate composite particle powder.

The method for preparing the isolated soy protein-based composite particles loaded with the bovine myocardial peptide according to claim 1, wherein the pH values of the isolated soy protein-bovine myocardial peptide mixed solution are respectively 4.0, 5.0, 6.0, 7.0 and 8.0, the adding amounts of the isolated soy protein are respectively 0.0 g, 0.2 g, 0.4 g, 0.6 g and 0.8 g, the pH values of the isolated soy protein-sodium alginate mixed solution are respectively 3.0, 3.5, 4.0 and 4.5, and the stirring temperatures are respectively room temperature, 40 ℃, 50 ℃, 60 ℃ and 70 ℃. Subsequently, composite particles were prepared under established optimal conditions, wherein the total weight of soy protein isolate and sodium alginate was 0.3 g, and the mass ratio (SPI/SA) was 1:0, 4:1, 2:1, 1:1, 1:2, 1:4 and 0:1, respectively.

The isolated soy protein-based composite particle loaded with bovine myocardial peptide and the preparation method thereof according to claim 3, wherein the encapsulation efficiency of the composite particle is 60.04-71.60%, the absolute value of Zeta potential is 16.40-43.50 mV, the DPPH free radical clearance of the composite particle after in vitro gastrointestinal digestion is 28.30-33.57%, and the absorbance value measured by iron ion reducing power is 0.13-0.17.
