The method has higher extraction rate of the soybean protein, and the extracted soybean protein has higher purity, and the extracted soybean protein has an immunoregulation function.

Claims (10)

  1. 1. A method for extracting soy protein, comprising: mixing low-temperature soybean meal, sodium chloride solution and cellulase, regulating the pH to 3.5-4.5, performing first extraction, inactivating enzyme under heating, and performing first solid-liquid separation to obtain a first extract and soybean dregs; mixing the bean dregs with water, regulating the pH value of the solution to 9-11, performing second extraction, and then performing second solid-liquid separation to obtain a second extract; mixing the first extract and the second extract, regulating the pH of the mixed extract to 3.5-4.5, standing, performing third solid-liquid separation, purifying the obtained precipitate, and drying to obtain soybean protein.
  2. 2. The method for extracting soybean protein according to claim 1, wherein the concentration of the sodium chloride solution is 0.1-0.3 mol/L.
  3. 3. The method for extracting soybean protein according to claim 1, wherein the mass of the cellulase accounts for 1.0-2.0% of the mass of the low-temperature soybean meal.
  4. 4. The method for extracting soybean protein according to claim 2, wherein the feed liquid ratio of the low-temperature soybean meal to the sodium chloride solution is 1:15-1:25 g/mL.
  5. 5. The method for extracting soybean protein according to claim 2, wherein the temperature of the enzyme deactivation is 75-100 ℃, and the time of the enzyme deactivation is 10-15 min.

The method for extracting soybean protein according to claim 1, wherein the first extraction time is 40-80 min; and/or the temperature of the first extraction is 40-45 ℃; And/or, the first extraction is performed under ultrasonic conditions with a power of 200-280W; And/or the method further comprises adding a first pH regulator to make the pH of the first extraction be 3.5-4.5, wherein the first pH regulator comprises hydrochloric acid solution.

The method for extracting soybean protein according to claim 1, wherein the temperature of the second extraction is 40-45 ℃; and/or the second extraction time is 40-80 min; And/or, the second extraction is performed under ultrasonic conditions with a power of 200-280W; and/or the method further comprises adding a second pH regulator to bring the pH at the second extraction to 9-11, wherein the second pH regulator comprises sodium hydroxide solution; and/or the method further comprises adding a third pH regulator to make the pH of the mixed extract solution 3.5-4.5, wherein the third pH regulator comprises hydrochloric acid solution.
  8. 8. The method for extracting soybean protein according to any one of claims 1 to 7, wherein the purification comprises re-dissolving the precipitate obtained by the third solid-liquid separation with water, followed by dialysis with distilled water.
  9. 9. A soy protein, characterized in that it is prepared by the extraction method of the soy protein according to any one of claims 1 to 8.
  10. 10. Use of the soy protein of claim 9 in a health food.

The existing protein extraction method mainly adopts the traditional alkali-dissolution and acid-precipitation method, but the method has the problems of low purity, poor quality and the like of the obtained protein. Therefore, a soybean protein extraction method capable of improving the purity and quality of the protein needs to be developed, so that the application range of the soybean protein is widened, the requirements of different fields are met, and the soybean protein extraction method has remarkable market potential and social benefits. Disclosure of Invention The application aims to provide a soybean protein, an extraction method and application thereof, so as to solve the problems. According to an embodiment of the application, the concentration of the sodium chloride solution is 0.1-0.3 mol/L. According to the embodiment of the application, the mass of the cellulase accounts for 1.0-2.0% of the mass of the low-temperature soybean meal. In some embodiments, the first and second extracts are mixed, and after adjusting the pH of the mixed extracts to 3.5-4.5, the mixed extracts may be allowed to stand at a temperature of 4 ℃ overnight. According to an embodiment of the application, the purification comprises re-dissolving the precipitate obtained by the third solid-liquid separation with water, followed by dialysis with distilled water.
