Abstract
The invention relates to the production of resinated wine (retsina) using resin that is produced without the use of sulfuric acid paste. The absence of sulfuric acid paste during the resinification process results in distinctly different and unique organoleptic characteristics compared to that produced by conventional methods. This innovative method ensures that the use of free-flowing resin in winemaking results in wine that lacks the oily character of the resin, leading to a significant qualitative enhancement of the retsina.
