KR-102963591-B1 - Manufacturing method of beverage having mountain grown ginseng and acer tegmentosum, beverage using the same
Abstract
The present invention relates to a method for manufacturing a beverage containing wild ginseng and Korean ash, comprising the steps of: freeze-drying washed wild ginseng; grinding the freeze-dried wild ginseng into powder using a fine grinder; mixing water with the powdered wild ginseng and then performing hot water extraction to obtain a wild ginseng powder extract; and mixing the obtained wild ginseng powder extract with a Korean ash extract. Compared to conventional methods of using fresh wild ginseng or using the extract immediately after freeze-drying, a large amount of extract can be obtained from a small amount of wild ginseng, thereby enabling the efficient production of a wild ginseng beverage with excellent economic efficiency.

Description
Manufacturing method of beverage having mountain grown ginseng and acer tegmentosum, beverage using the same The present invention relates to a beverage using wild ginseng, and more specifically to a method for manufacturing a beverage comprising wild ginseng and a Korean ash tree extract. More specifically, the invention relates to a method for manufacturing a beverage with excellent taste and flavor while using a small amount of expensive wild ginseng, and to the beverage produced thereby. Sanyangsam is a general term for semi-wild or semi-cultivated ginseng produced by the artificial sowing of wild ginseng, and it is distinguished from wild ginseng and is distributed at a higher price than ginseng. Cultivated wild ginseng is distributed in the forms of fresh, dried, and dried powder; however, dried ginseng has the disadvantage of a significantly lower recovery rate, and distribution is not active because consumers suspect that various additives are added during processing. Additionally, farmers are facing difficulties due to the problem of fresh ginseng having a very short shelf life. As such, existing methods present a problem where the restoration rate of dried wild ginseng—particularly for fine parts like rootlets—is significantly low, making it difficult to maintain its original form; fresh wild ginseng has a very short shelf life; and consumers tend to avoid dried powdered wild ginseng. Consequently, despite the excellent physiological functions of wild ginseng, there are limitations to its industrialization, which not only fails to contribute significantly to farm income but is also an undesirable phenomenon from the perspective of public health, thus requiring a solution. Furthermore, compared to the potential of the raw wild ginseng, the product range related to it is currently very insufficient. Additionally, while wild ginseng has primarily been sold as raw ginseng, there is a need for related products that allow for convenient consumption beyond the raw material itself. FIG. 1 is a flowchart illustrating the manufacturing process of a method for manufacturing a beverage containing wild ginseng and Korean ash tree according to a preferred embodiment of the present invention, and FIG. 2 is a photograph of wild ginseng prepared according to an example of the present invention before (a) and after (b) washing, and FIG. 3 is a photograph of freeze-dried wild ginseng prepared according to an example of the present invention, and FIG. 4 is a photograph of ultrafinely ground wild ginseng powder after freeze-drying prepared according to an example of the present invention, and Figure 5 is a photograph showing the results of a safety evaluation experiment for a beverage containing wild ginseng and Korean ash tree prepared according to a preferred embodiment of the present invention. The present invention is capable of various modifications and may have various embodiments; specific embodiments are illustrated in the drawings and described in detail in the detailed description. However, this is not intended to limit the present invention to specific embodiments, and it should be understood that it includes all modifications, equivalents, and substitutions that fall within the spirit and scope of the present invention. In describing the present invention, detailed descriptions of related prior art are omitted if it is determined that such detailed descriptions may obscure the essence of the present invention. The terms used in this application are used merely to describe specific embodiments and are not intended to limit the invention. The singular expression includes the plural expression unless the context clearly indicates otherwise. In this application, terms such as "comprising" or "having" are intended to specify the presence of the features, numbers, steps, actions, components, parts, or combinations thereof described in the specification, and should be understood as not precluding the existence or addition of one or more other features, numbers, steps, actions, components, parts, or combinations thereof. Terms such as "first," "second," etc., may be used to describe various components, but said components should not be limited by said terms. These terms are used solely for the purpose of distinguishing one component from another. FIG. 1 is a flowchart showing the manufacturing process of a method for manufacturing a beverage containing wild ginseng and Korean ash tree according to a preferred embodiment of the present invention. As described herein, the present invention is a method for manufacturing a beverage comprising wild ginseng and Korean ash, characterized by comprising the steps of: freeze-drying wild ginseng (S100); powdering (S200); obtaining a wild ginseng powder extract (S300); and mixing the wild ginseng powder extract and the Korean ash extract (S400).
