Description
Perilla Oil with Red Ginseng and Its Manufacturing Method The present invention relates to red ginseng perilla oil and a method for producing the same, and more specifically, to red ginseng perilla oil and a method for producing the same that allows one to consume plant-based omega 3 and a high amount of saponin from perilla oil by consuming red ginseng perilla oil, as well as delay the rancidity of perilla oil. As interest in health increases, so does interest in health supplements. Among these, ginseng is a representative health food that has been widely used as a medicinal herb for a long time. However, because ginseng is not easy to store for a long period, it is steamed or dried using steam or other methods, and this is red ginseng. Red ginseng contains saponins, which are glycoside components, as well as panacene, polyacetylene compounds, nitrogenous compounds, flavonoids, B vitamins, trace elements, enzymes, antioxidants, organic acids, and amino acids, which help restore vitality, strengthen immunity, and provide nourishment and strengthen the body. Ginsenosides are complex carbohydrates, specifically complexes of alcohol or phenol and sugar, and most are dammarane saponins of the triterpenoid class. Dammarane saponins include protopanaxadiol (PPD) and protopanaxatriol (PPT). 19 to 22 types of PPD have been reported, including ginsenosides Rb1, Rb2, Rc, Rd, Rg3, and Rh2, and they are known to possess various pharmacological effects. Although various easy and convenient methods for consuming the active ingredients of red ginseng are being researched, some inconvenience still exists. Figure 1 is a graph showing the antioxidant activity of Example 1 and Comparative Example 2 according to the present invention. Figure 2 is a graph showing the antioxidant activity of red ginseng perilla oil of Example 1 (containing 3 parts by weight of red ginseng liposomes) and Comparative Example 1 and Comparative Example 2. Figure 3 is a graph showing the anti-inflammatory activity of Example 1 and Comparative Example 2 according to the present invention. Figure 4 is a graph showing the anti-inflammatory activity of red ginseng perilla oil of Example 1 (containing 3 parts by weight of red ginseng liposomes) and Comparative Example 1. Figure 5 is a schematic diagram of the ultrasonic vacuum degassing process of the method for manufacturing perilla oil according to the present invention. Hereinafter, the red ginseng sesame oil of the present invention and the method of manufacturing the same will be described. The present invention provides red ginseng liposomes having a saponin content of 50 mg/g or more and red ginseng perilla oil containing perilla oil. The red ginseng perilla oil of the present invention can obtain antioxidant and anti-inflammatory effects by containing a high amount of saponin, and has the advantage of being able to consume perilla oil rich in omega 3 together. In addition, the red ginseng perilla oil of the present invention contains red ginseng in the perilla oil, which can delay the rancidity period. Preferably, the red ginseng perilla oil of the present invention may have a saponin content of 60 mg/g or more, and preferably 80 mg/g or more. In addition, the saponin content may be 50 mg/g to 120 mg/g, more preferably 60 mg/g to 100 mg/g. The red ginseng perilla oil of the present invention has the advantage of a long shelf life because, instead of mixing red ginseng concentrate or red ginseng powder with perilla oil, red ginseng liposomes are manufactured and mixed, thereby effectively suppressing the phenomenon of separation between perilla oil and red ginseng. In addition, the emulsifier used to manufacture the red ginseng liposome of the present invention is not limited, but may be manufactured with an emulsifier that is polysorbate 80, polysorbate 20, and a mixture thereof. Preferably, the emulsifier according to one embodiment of the present invention may be a mixture of polysorbate 80 and polysorbate 20. By using these emulsifiers, the separation of red ginseng liposomes and perilla oil into layers can be effectively inhibited. Preferably, the weight ratio of polysorbate 80 to polysorbate 20 may be 1:0.2 to 2, and more preferably 1:0.5 to 1.0. An emulsifier according to one embodiment of the present invention may be included in an amount of 1 to 5 parts by weight, preferably 1 to 3 parts by weight, per 100 parts by weight of red ginseng concentrate. Red ginseng liposomes according to one embodiment of the present invention may be included in an amount of 0.1 to 4.5 parts by weight per 100 parts by weight of perilla oil, and in order to include high concentrations of red ginseng liposomes without the red ginseng liposomes and perilla oil separating into layers, they may be included in an amount of 0.1 to 4 parts by weight, preferably 2 to 3.5 parts by weight. In addition, the present invention provides a method for manufacturing red ginseng perilla oil. The red ginseng perilla oil of the pr
