Abstract
The present invention relates to a method for manufacturing crispy pork belly, comprising the steps of cutting pork belly at specific intervals, making incisions, and marinating it; aging it at a low temperature for a long period; a multi-stage drying step including oven drying, cooling, and freeze-drying; and frying it at a controlled temperature in a mixture of lard and edible oil in a specific ratio. The crispy pork belly produced by the method of the present invention has a unique texture in which the skin is crispy and the meat is tender, and can maintain consistent quality even during mass production. Furthermore, it offers advantages to both consumers and sellers by enabling frozen storage and distribution while reproducing the best taste and texture with simple cooking.

Crispy and Tender Pork Belly and Method for Manufacturing Thereof The following examples relate to crispy pork belly with improved texture and the manufacturing technology thereof. The present invention relates to a method for manufacturing crispy pork belly, and more specifically, to a method for manufacturing crispy pork belly using pork belly that has a crispy exterior and a tender interior. Conventional methods for manufacturing crispy pork belly simply involve seasoning and frying pork belly, making it difficult to simultaneously achieve a crispy skin texture and a tender meat texture. Additionally, there was a problem in maintaining consistency in quality during mass production. In the following, various modifications may be made to the embodiments, and thus the scope of the patent application is not limited or restricted by these embodiments.
