Abstract

The present invention relates to a functional packaging material for maintaining the quality of bread products. By coating the packaging material using a coating composition containing polyglycerin fatty acid esters, the spoilage of the contents of the packaging can be delayed as much as possible, and the growth of microorganisms such as bacteria and mold inside and outside the packaging material can be inhibited through antibacterial and antifungal substances. Consequently, the shelf life of various bread products can be improved through the packaging material of the present invention.

Claims (19)

  1. A composition for functional coating comprising polyglycerin fatty acid esters.
  2. A functional coating composition according to claim 1, wherein the composition further comprises a metal-polymer composite in which a metal and a polymer are combined or an extract of the genus Quercus .
  3. A functional coating composition according to claim 2, wherein the metal is one or more selected from the group consisting of silver (Ag), gold (Au), mercury (Hg), copper (Cu), zinc (Zn), cobalt (Co), aluminum (Al), manganese (Mn), and selenium (Se).
  4. A functional coating composition according to paragraph 3, wherein the metal exists in the form of an oxide combined with oxygen (O).
  5. A functional coating composition, wherein, in paragraph 2, the polymer is a sugar or amino acid polymer.
  6. A functional composition according to claim 5, wherein the molecular weight of the polymer is 0.4 to 4.0 kDa.
  7. A functional coating composition according to claim 6, wherein the polymer is a polypeptide.
  8. A functional coating composition according to claim 7, wherein the polypeptide is composed of 4 to 40 amino acids.
  9. A functional coating composition according to claim 8, wherein the polypeptide comprises the sequence of the first sequence of the sequence list or a base sequence having substantial identity therewith.

A functional coating composition according to claim 2, wherein the genus Quercus is one or more selected from the group consisting of Quercus aliena , Quercus variebilis , Quercus dentata, Quercus mongolica , Quercus acutissima , Quercus crispula, Quercus glauca , Quercus glancclulifera blume , Quercus glauda , and Quercus myrsinaefolia .

Description

Functional packaging for maintaining fine quality of bakery products The present invention relates to a functional packaging material for maintaining the quality of bread products, and more specifically, to a packaging material capable of improving the shelf life of bread products by inhibiting the growth of bacteria or mold in bread products through coating the packaging material using a coating composition comprising a polyglycerin fatty acid ester or an antibacterial and antifungal substance. Recently, with the increase in living standards and the rise in single-person households, the use of packaging materials for food delivery or storage has increased significantly. These food packaging materials are required to not only protect the contents but also to possess the functionality to maintain the freshness and quality of the packaged product. In particular, when packaged products are fresh foods such as bread or produce, moisture inside the packaging can cause various harmful bacteria to multiply, leading to a rapid decline in freshness and poor food hygiene. Furthermore, in the case of bread products, there is a high risk that mold will proliferate within a few days of packaging completion and the start of distribution, resulting in a complete loss of marketability. Therefore, in the packaging process of bread products, which are particularly vulnerable to mold among various types of packaged products, there is a need for the development of functional packaging materials capable of maintaining the freshness of bread products through antibacterial or antifungal action and extending the shelf life by inhibiting the spoilage of the contents. FIG. 1 is a schematic diagram of a functional packaging material according to one embodiment of the present invention. The functional packaging material (1000) of the present invention may include a substrate (100) that serves as a supporting base for the packaging material and primarily determines physical properties, and a coating layer (200) disposed on the surface of the substrate.
