Abstract
FIELD: biotechnology. SUBSTANCE: invention relates to obtaining flour from black soldier fly larvae (lat. Hermetia illucens). Method for obtaining flour from black soldier fly larvae comprises growing larvae in premises, in which temperature not less than 15 °C and not more than 25 °C is maintained, in containers of 2-4 kg on food substrate, with subsequent harvesting of larvae before their pupation stage. Then selection of healthy individuals and washing with running water is carried out, after which blanching is performed by immersing larvae into boiling water for 1 min and rapid cooling. Then drying at temperature 50-70 °C with air blowing 0.5-2.0 m/s duration 4-6 hours to moisture content of final product not more than 10% is carried out. Then larvae are cooled to room temperature, defatted with hot pressing oil press to content of raw fat in them not more than 10% and cake is obtained. Then cake is crushed to state of flour using mill, sifted and packed into hermetic packaging, and stored in dry cool place at temperature not higher than 20 °C.
